INGREDIENTS
6 oz Lean Ground Beef (90% lean)
1/2 cup cooked Jasmine Rice
1 cup Green Beans
1 large Egg
1 tsp Sesame Oil
2 cloves Garlic
1 tbsp Low Sodium Soy Sauce
1 tsp grated Ginger
PREPARATION
Prepare jasmine rice as per package instructions if not already cooked.
Rinse and trim the green beans, and mince the garlic and grate the ginger.
Heat the sesame oil in a large skillet or wok over medium-high heat.
Add the minced garlic and grated ginger, stirring for 30 seconds until fragrant.
Add the lean ground beef to the pan, breaking it up with a spatula, and cook until browned and nearly cooked through.
Toss in the green beans and continue stir-frying for 3-4 minutes until they are crisp-tender.
Push the beef and green beans to the side of the pan and crack the egg into the space. Scramble it until nearly set, then combine with the beef and vegetables.
Stir in the low sodium soy sauce, mixing well to coat all ingredients.
Plate the dish over the cooked jasmine rice and serve immediately.
