Crispy Boneless Chicken Thighs with Roasted Broccoli
Enjoy tender and crispy boneless chicken thighs paired with perfectly roasted broccoli. This dish combines a satisfying crunch with vibrant, slightly charred broccoli, all finished with a hint of garlic and lemon for a refreshing zest that makes every bite a delight.
INGREDIENTS
200g Boneless Skinless Chicken Thighs
150g Broccoli
0.5 tbsp Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
0.5 tsp Salt
0.25 tsp Black Pepper
PREPARATION
Preheat your oven to 425°F (220°C).
Pat the chicken thighs dry with paper towels. This helps in getting a crispy exterior.
In a small bowl, mix the olive oil, minced garlic, lemon juice, salt, and black pepper.
Brush the chicken thighs evenly with the marinade on all sides.
Place the chicken thighs on a baking sheet lined with parchment paper.
In a separate bowl, toss the broccoli with a drizzle of olive oil, a pinch of salt and pepper. Spread them out on another baking sheet.
Place both baking sheets in the oven. Roast the chicken thighs for about 20-25 minutes, or until they reach an internal temperature of 165°F (74°C) and have a crispy exterior.
Roast the broccoli for approximately 15-20 minutes until the edges are nicely browned and tender.
Once cooked, plate the chicken and broccoli together, and serve immediately.
