INGREDIENTS
5 oz Alligator Meat
1 cup Asparagus
1 medium Sweet Potato
2 tsp Olive Oil
1 clove Garlic
1 tbsp Mixed Fresh Herbs
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F for the asparagus and sweet potato.
Peel and dice the sweet potato into small cubes for faster roasting.
Toss the sweet potato cubes and trimmed asparagus with 1 teaspoon olive oil, salt, and pepper. Spread them in a single layer on a baking sheet.
Roast in the oven for 20-25 minutes, stirring halfway through, until tender and slightly caramelized.
While the vegetables roast, season the alligator meat with salt, pepper, crushed garlic, and chopped fresh herbs.
Heat a skillet over medium-high heat with the remaining olive oil. Sear the alligator meat for about 3-4 minutes on each side until a golden crust forms and the center reaches your preferred doneness.
Rest the meat for a couple of minutes before slicing.
Plate the sliced alligator alongside the roasted asparagus and sweet potato. Garnish with a sprinkle of extra fresh herbs if desired and serve immediately.
