PREPARATION
Preheat your oven to 425°F.
Cube the sweet potato into bite-sized pieces. Dice the red bell pepper and red onion. Cut the firm tofu into cubes.
On a sheet pan, toss the sweet potato, red bell pepper, red onion, and tofu with olive oil, smoked paprika, salt, and pepper until evenly coated.
Arrange the turkey bacon slices on one side of the sheet pan.
Roast in the preheated oven for 20-25 minutes until the sweet potato is tender and the edges are crispy. Stir halfway through for even cooking.
Meanwhile, in a small pan, cook the turkey bacon over medium heat until crisp. Set aside.
