Spicy Fajita Chicken Stuffed Sweet Potato
Savor a vibrant blend of tender, spicy chicken fajita filling nestled in a perfectly baked sweet potato. This dish brings together the smoky heat of chili spices with the natural sweetness of the potato, accented by crisp bell peppers and red onion for a delightful bite.
INGREDIENTS
4 oz Chicken Breast
1 medium Sweet Potato
1/2 medium Red Bell Pepper
1/4 small Red Onion
1 tsp Olive Oil
1 tsp Chili Powder
1 tsp Ground Cumin
1 tsp Smoked Paprika
1 tbsp Lime Juice
Salt and Pepper to taste
PREPARATION
Preheat the oven to 400°F. Scrub the sweet potato and prick it with a fork.
Bake the sweet potato on a baking sheet for 45-60 minutes until tender.
While the sweet potato is baking, dice the chicken breast into thin strips.
Heat olive oil in a skillet over medium-high heat. Sauté sliced red bell pepper and red onion for 3-4 minutes until just softened.
Add the chicken strips to the skillet and season with chili powder, cumin, smoked paprika, salt, and pepper. Cook for 5-7 minutes until the chicken is fully cooked and slightly charred.
Stir in lime juice and adjust seasonings to taste.
Once the sweet potato is done, slice it open and gently mash the insides to create a bed for the chicken fajita mixture.
Spoon the spicy chicken and veggie fajita filling into the sweet potato. Serve warm.
