INGREDIENTS
4 oz Chicken Breast
2 oz dry Whole Wheat Pasta
1/4 cup Nonfat Greek Yogurt
1 oz Light Cream Cheese
1/2 cup chopped Broccoli
1 clove Garlic
1 tsp Olive Oil
Salt and Pepper (to taste)
PREPARATION
Bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
Meanwhile, heat olive oil in a skillet over medium heat. Season the chicken breast with salt and pepper, and sauté for about 5-6 minutes per side until fully cooked. Remove from the pan and slice into strips.
In the same skillet, add minced garlic and chopped broccoli. Sauté for 2-3 minutes until fragrant and slightly tender.
Lower the heat and add light cream cheese and nonfat Greek yogurt to the skillet, stirring well to create a creamy sauce. Season with a little salt and pepper.
Add the cooked pasta and chicken strips into the skillet. Toss everything together until the pasta is evenly coated with the creamy sauce.
Serve immediately, garnished with additional black pepper if desired.
