1/2 cup cooked Quinoa
1 cup Green Beans
1 cup fresh Spinach
1 tbsp Olive Oil
1 clove Garlic
Salt and Pepper to taste
PREPARATION
Prepare the quinoa as per package instructions, allowing it to cool slightly once cooked.
Season the chicken breast with salt and pepper on both sides.
Heat half of the olive oil in a non-stick skillet over medium-high heat. Add the chicken breast and sear for 5-6 minutes per side, or until fully cooked and golden brown. Remove the chicken from the skillet and let it rest.
