Crispy Pan-Seared Salmon with Spicy Coconut Lime Greens
Enjoy a vibrant dish featuring a perfectly crispy pan-seared salmon paired with spicy, tangy coconut lime greens. The dish is both refreshing and satisfying, balancing the richness of the salmon with the zesty, lively notes of coconut and lime.
INGREDIENTS
5 oz Salmon Fillet
1 cup chopped Kale
1 tsp Coconut Oil
2 tbsp Lime Juice
1 Garlic clove, minced
1/4 tsp Red Chili Flakes
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry with paper towels and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the coconut oil.
Once the oil is shimmering, place the salmon fillet skin-side down and press lightly to ensure even contact. Cook for about 4-5 minutes until the skin is crispy and the salmon is nearly cooked halfway.
Flip the salmon carefully and cook for an additional 3-4 minutes until done to your liking. Remove salmon from the pan and set aside.
In the same skillet, reduce heat to medium and add minced garlic and red chili flakes. Sauté for about 30 seconds until fragrant.
Add the chopped kale to the skillet and toss to coat with the infused oil. Sauté for 2-3 minutes until the kale slightly wilts but retains its vibrant color.
Stir in the lime juice and adjust seasonings with salt and pepper.
Plate the kale on a serving dish and top with the crispy salmon fillet. Serve immediately.
