INGREDIENTS
7 oz Salmon Fillet
1.5 cups Green Beans
1 cup Brown Rice (cooked)
1 tbsp Olive Oil
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Rinse the salmon fillet under cold water and pat dry with paper towels. Season with salt and pepper on both sides.
Heat a nonstick skillet over medium-high heat and add the olive oil.
Place the salmon skin-side down (if applicable) in the skillet and sear for about 4 minutes. Flip the salmon and cook for an additional 3-4 minutes until cooked through and golden.
Meanwhile, bring a small pot of water to a boil. Add the brown rice, reduce heat, cover, and simmer for about 40-45 minutes or until tender and water is absorbed.
In another pan, add a small drizzle of olive oil and sauté minced garlic for about 30 seconds until fragrant.
Add the green beans to the garlic, sauté for 5-7 minutes until they are tender-crisp. Season with salt and pepper.
Plate the cooked brown rice, top with the seared salmon, and add a side of garlic green beans. Serve immediately.
