PREPARATION
Preheat a non-stick skillet over medium heat.
Pour the egg whites into a bowl and lightly whisk. Set aside.
Slice the turkey sausage into rounds.
Heat 1 teaspoon of olive oil in the skillet and add the turkey sausage rounds. Sauté until lightly browned, then remove and set aside.
In the same skillet, add the whisked egg whites. Gently scramble them over medium heat until just set.
