Savor a hearty baked potato topped with savory lean ground turkey, crisp roasted broccoli, a dollop of creamy Greek yogurt, and a sprinkle of cheddar cheese. This satisfying dish combines warm, tender potato with robust flavors, ideal for a clean, balanced meal any time of day.
INGREDIENTS
1 medium Baked Potato (150g)
3 ounces Lean Ground Turkey (85g)
1 cup Broccoli (91g)
2 tablespoons Non-Fat Greek Yogurt (30g)
0.5 ounce Cheddar Cheese (14g)
1 teaspoon Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F.
Wash the baked potato thoroughly and prick it with a fork a few times. Bake in the oven for about 45-60 minutes or until tender.
While the potato bakes, heat a skillet over medium heat and add the olive oil. Add the lean ground turkey, season with salt and pepper, and cook until it’s browned and fully cooked, breaking it apart as it cooks.
Steam or roast the broccoli until it turns bright green and retains a bit of crispness, about 5-7 minutes. Season lightly with salt and pepper.
Once the baked potato is done, carefully slice it open and fluff the inside with a fork. Layer on the cooked ground turkey and crispy broccoli.
Top with a dollop of non-fat Greek yogurt and sprinkle the cheddar cheese over the top. Serve immediately.
