90g Shelled Edamame

30g Arugula

PREPARATION
Press the tofu to remove excess water, then cut it into bite-sized cubes.
In a bowl, toss the tofu cubes with cornstarch, a pinch of salt and pepper to ensure an even crispy coating.
Heat a non-stick pan with a light spray of cooking oil over medium-high heat. Sauté the tofu cubes until they are golden and crispy on all sides, about 6-8 minutes. Remove from the heat.
Meanwhile, lightly steam or briefly blanch the shelled edamame until just tender, then drain.
