INGREDIENTS
1 scoop Chocolate Protein Powder (30g)
1/3 cup ground Rolled Oats (30g)
3 Egg Whites (approx. 90g)
1/4 cup Unsweetened Almond Milk (60ml)
1 tbsp Unsweetened Cocoa Powder (5g)
1/4 cup Non-fat Greek Yogurt (60g)
1/2 medium Mashed Banana (50g)
1 tbsp Honey (21g)
1 tsp Coconut Oil (5g)
1/2 tsp Baking Powder
PREPARATION
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease with coconut oil.
In a large bowl, combine the Chocolate Protein Powder, ground rolled oats, unsweetened cocoa powder, and baking powder.
In a separate bowl, whisk the egg whites until slightly frothy. Add in the unsweetened almond milk, non-fat Greek yogurt, mashed banana, and honey. Mix until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid overmixing to keep the muffins light.
Fold in the coconut oil evenly throughout the batter.
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
