INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1.5 cups Cauliflower
1 tbsp Olive Oil
2 tbsp Plain Greek Yogurt
1 clove Garlic
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Pat the salmon fillet dry with paper towels and season with a pinch of salt and black pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Place the salmon, skin-side down if applicable, in the skillet and sear for about 3-4 minutes until a golden crust forms.
Flip the salmon and continue cooking for another 3-4 minutes until it reaches your desired doneness. Remove from heat.
Meanwhile, steam the asparagus in a steamer or a microwave-safe bowl with a splash of water for about 4-5 minutes until tender yet crisp.
In a small pot, steam the cauliflower florets (with chopped garlic) for about 8-10 minutes until very soft.
Transfer the steamed cauliflower and garlic to a blender or use a potato masher to create a smooth mash. Mix in the Greek yogurt and adjust salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Serve immediately.
