INGREDIENTS
7 oz Chicken Breast (approx 200g)
1 cup Green Beans (125g)
1 medium Sweet Potato (130g)
1 tbsp Olive Oil
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Begin by peeling and cubing the sweet potato. Boil the cubes in lightly salted water until tender, about 15 minutes.
While the sweet potato cooks, trim the ends of the green beans and rinse them thoroughly.
Season the chicken breast with salt and pepper on both sides.
Heat half of the olive oil in a skillet over medium-high heat. Sear the chicken breast for about 5-6 minutes per side, until it is golden and cooked through. Remove from heat and let rest.
In another pan, heat the remaining olive oil over medium heat. Add the minced garlic (from about 2 cloves) and sauté until fragrant, then add the green beans. Sauté for 4-5 minutes until the green beans are tender but still crisp. Season with salt and pepper.
Drain the sweet potatoes and lightly mash them with a fork. If desired, add a splash of water or a small amount of milk to achieve a creamier consistency, and season with salt and pepper.
Plate the dish by placing the sweet potato mash on a side, arranging the garlic green beans next to it, and slicing the chicken breast over the top. Serve warm.
