Enjoy a beautifully seared salmon fillet paired with tender steamed asparagus and a creamy cauliflower mash enriched with a touch of Greek yogurt and olive oil. This dish offers a perfect balance of lean protein and healthy fats with fresh, vibrant vegetables.
INGREDIENTS
5 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1 tbsp Olive Oil
1/4 cup Greek Yogurt
1 clove Garlic
1/4 tsp Salt
1/8 tsp Black Pepper
1 Lemon Wedge
PREPARATION
Pat the salmon fillet dry with paper towels. Season both sides lightly with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down, and sear for about 3-4 minutes until golden and crispy.
Flip the salmon carefully and cook for an additional 3-4 minutes until the fish is just cooked through and opaque in the center. Remove from heat and squeeze a lemon wedge over the top.
While the salmon is cooking, steam the asparagus in a steamer basket over boiling water for about 4-5 minutes until tender but still crisp.
For the cauliflower mash, steam or boil the cauliflower florets until they are very tender (about 8-10 minutes). Transfer the cauliflower to a blender or use an immersion blender, add the minced garlic, Greek yogurt, salt, and pepper, then blend until smooth and creamy.
Plate the seared salmon alongside the steamed asparagus and a generous serving of cauliflower mash. Serve immediately.
