Enjoy a light yet flavorful dinner featuring a perfectly seared 7-ounce wild salmon fillet paired with tender steamed asparagus and a creamy garlic-infused cauliflower mash. This dish brings together the rich taste of salmon with the fresh and vibrant notes of garden asparagus and a velvety, garlicky mash that is both satisfying and nutrient-dense.
INGREDIENTS
7 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1 clove Garlic
2 tsp Olive Oil
2 tbsp Greek Yogurt (Nonfat)
Salt and Pepper (to taste)
PREPARATION
Preheat a non-stick skillet over medium-high heat.
Season the 7 oz salmon fillet with salt and pepper on both sides.
Lightly oil the skillet and sear the salmon for about 3-4 minutes per side until the exterior is crispy and the interior flakes easily with a fork. Remove from the skillet and set aside.
While the salmon is cooking, steam the asparagus until just tender, about 4-5 minutes.
For the cauliflower mash, steam 1 cup of cauliflower florets along with 1 clove of garlic for about 8-10 minutes until very tender.
Transfer the steamed cauliflower and garlic to a blender or use an immersion blender; add 2 tsp of olive oil and 2 tbsp of Greek yogurt. Blend until the mixture is smooth and creamy. Season with salt and pepper to taste.
Plate the seared salmon alongside the steamed asparagus and a generous serving of garlic cauliflower mash, then serve immediately.
