Crispy Ginger-Sesame Tofu with Edamame and Stir-Fried Bok Choy
Enjoy a delightful fusion of crispy tofu and tender edamame, brought together with a zingy ginger-sesame glaze and vibrant stir-fried bok choy. This dish offers a satisfying crunch from tofu, a nutty depth from sesame seeds, and a blast of freshness from bok choy – perfect for a nourishing, plant-forward meal.
INGREDIENTS
250g Firm Tofu
100g Shelled Edamame
1 cup Bok Choy (chopped)
1 tbsp Sesame Seeds
1 tbsp Fresh Ginger, grated
1 clove Garlic
1 tbsp Low Sodium Soy Sauce
1 tsp Olive Oil
PREPARATION
Press the firm tofu for at least 15 minutes to remove excess water, then cut it into 1-inch cubes.
In a bowl, gently toss the tofu cubes with a little low sodium soy sauce and the grated ginger.
Heat olive oil in a non-stick skillet over medium-high heat. Add the tofu cubes and cook until all sides are golden and crispy, about 6-8 minutes. Remove tofu and set aside.
In the same skillet, add minced garlic and a splash more soy sauce if desired; quickly sauté until fragrant.
Add chopped bok choy and stir-fry for about 2 minutes until tender yet still crisp.
Gently fold in the shelled edamame and crispy tofu to heat through, allowing flavors to meld for an additional minute.
Finish by sprinkling sesame seeds over the dish before serving. Enjoy warm as a balanced meal.
