INGREDIENTS
6 oz Shrimp, peeled and deveined
1 cup Asparagus
2 cloves Garlic
1 tbsp Unsalted Butter
1 tsp Extra Virgin Olive Oil
1 tbsp Lemon Juice
Pinch Salt
Pinch Black Pepper
PREPARATION
Pat the shrimp dry with paper towels and season lightly with salt and black pepper.
Trim the tough ends of the asparagus and cut into 2-inch pieces.
Heat the olive oil in a large non-stick skillet over medium-high heat. Add the asparagus and sauté for about 3-4 minutes until they start to soften but still retain their crispness. Remove asparagus from the skillet and set aside.
In the same skillet, add the butter and melt it. Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
Add the shrimp to the skillet in a single layer. Sear for about 2 minutes on one side until pink, then flip and cook for another 2 minutes until cooked through.
Return the asparagus to the skillet and drizzle with lemon juice, tossing gently to combine and heat through.
Taste and adjust seasoning with additional salt and pepper if needed. Serve immediately.
