A comforting twist on a classic dish, this shepherd’s pie pairs savory lean ground beef and garden vegetables nestled under a silky cauliflower mash. Each bite offers a satisfying medley of textures and flavors, making it a perfect hearty yet light dinner option.
INGREDIENTS
4 oz Lean Ground Beef
1.5 cups Cauliflower
1/4 cup Onion, diced
1 medium Carrot, diced
1/4 cup Frozen Peas
1 tsp Olive Oil
1/4 cup Beef Broth
Seasonings (Salt, Pepper, Garlic Powder) to taste
PREPARATION
Preheat your oven to 400°F (200°C).
In a skillet over medium heat, add the olive oil and sauté the diced onion until softened, about 2-3 minutes.
Add the lean ground beef to the skillet and cook until browned, breaking it up with a spatula as it cooks.
Stir in the diced carrot and frozen peas. Pour in the beef broth and season with salt, pepper, and garlic powder. Let simmer for about 5 minutes until the vegetables are just tender.
Meanwhile, steam or boil the cauliflower until very tender, approximately 8-10 minutes.
Drain the cauliflower and mash it until smooth, seasoning with a pinch of salt and pepper to taste.
Transfer the beef and vegetable mixture into an oven-safe dish, and gently spread the creamy cauliflower mash on top.
Bake in the preheated oven for 10 minutes, allowing the flavors to meld together.
Remove from oven and serve warm.
