INGREDIENTS
6 oz Salmon Fillet
1/2 medium Sweet Potato
1 cup Green Beans
1/4 cup Low-Fat Cottage Cheese
1 tsp Olive Oil
2 cloves Garlic
Salt & Pepper to taste
PREPARATION
Preheat a skillet over medium-high heat. Pat the salmon dry and season both sides with salt and pepper.
Add half a teaspoon of olive oil to the skillet and sear the salmon for about 3-4 minutes on each side until nicely browned and cooked through. Remove from the skillet and set aside.
Peel and chop the sweet potato into chunks. Boil in lightly salted water until tender, about 10-12 minutes. Drain and mash with the low-fat cottage cheese. Season with salt and a pinch of pepper.
Trim the ends of the green beans and mince the garlic. In the same skillet, add the remaining olive oil and sauté the garlic until fragrant, then add the green beans. Sauté for 4-5 minutes until just tender while retaining a bit of crunch. Season with salt and pepper.
Plate the sweet potato mash, top with the seared salmon, and arrange the garlic green beans on the side. Serve warm.
