Enjoy a savory twist on chicken with a naturally sweet date glaze paired perfectly with a silky, creamy sweet potato mash. This dish balances succulent roasted chicken with the deep, caramel-like notes of stickiness from dates, and the smooth comfort of mashed sweet potato, all crafted into a satisfying meal.
INGREDIENTS
100g Chicken Breast
150g Sweet Potato
2 Deglet Noor Dates
0.25 cup Low-Sodium Chicken Broth
1 tbsp Lemon Juice
0.25 tsp Salt
0.25 tsp Black Pepper
PREPARATION
Preheat your oven to 400°F (200°C).
Season the chicken breast lightly with salt and pepper.
In a small saucepan, combine the pitted dates with the chicken broth and lemon juice. Simmer over low heat for 5-7 minutes until the dates soften and the mixture forms a sticky glaze.
Place the chicken breast on a baking tray lined with parchment paper. Brush a generous amount of the date glaze on the chicken.
Roast the chicken in the preheated oven for about 20-25 minutes, or until the internal temperature reaches 165°F (74°C). Midway through, brush again with the remaining date glaze.
While the chicken roasts, peel and cube the sweet potato. Steam or boil the cubes until tender, about 12-15 minutes.
Drain the sweet potato and mash it until smooth, adding a pinch of salt and a splash of chicken broth if needed for a creamier consistency.
Plate the roasted sticky date chicken alongside a generous serving of the creamy sweet potato mash. Drizzle any remaining glaze over the top and serve warm.
