INGREDIENTS
4 oz Chicken Breast
1/2 cup Long Grain Rice (dry)
1/2 cup Frozen Green Peas
1/2 cup chopped Red Bell Pepper
1/4 cup chopped Yellow Onion
1 tsp Olive Oil
1 tsp Ground Turmeric
1 tsp Ground Cumin
1 tsp Smoked Paprika
Salt and Black Pepper to taste
PREPARATION
Rinse and pat dry the chicken breast, then season both sides with salt, pepper, ground turmeric, ground cumin, and smoked paprika.
Heat olive oil in a large, deep skillet or a wide pan over medium heat. Add the chopped yellow onion and red bell pepper, and sauté until they become soft and fragrant, about 3-4 minutes.
Push the vegetables to the side of the pan and add the seasoned chicken breast. Sear the chicken for about 2-3 minutes on each side until lightly browned.
Stir in the dry long grain rice into the pan, coating it lightly with the spices and vegetable mixture.
Add 1 cup of water (or low-sodium chicken broth if preferred) and bring to a simmer. Cover the pan and reduce the heat to low. Allow to cook for about 15 minutes.
After 15 minutes, gently stir in the frozen peas. Replace the lid and continue cooking for an additional 5 minutes, or until the rice is tender and the chicken is fully cooked through.
Remove from heat, let sit for a couple minutes, then slice the chicken and serve together with the yellow rice and vegetables.
