INGREDIENTS
250g Extra-Firm Tofu
1/2 cup cooked Quinoa (93g)
1/2 cup Shelled Edamame (100g)
1 cup Mixed Salad Greens
1/2 cup Cherry Tomatoes
1/4 cup Red Onion
Seasonings (Salt, Pepper, Paprika, Garlic Powder)
PREPARATION
Press the tofu to remove excess moisture for at least 15 minutes, then cut it into bite-sized cubes.
Lightly toss the tofu cubes with salt, pepper, paprika, and garlic powder. For extra crispiness, you can dust them with a small amount of cornstarch.
Heat a nonstick skillet over medium-high heat and add a light spray of oil. Sauté the tofu cubes until they are golden and crispy on all sides, about 6-8 minutes. Remove from heat.
If quinoa is not already cooked, prepare it according to package instructions.
In a large bowl, combine the mixed salad greens, halved cherry tomatoes, and thinly sliced red onion.
Add the cooked quinoa and shelled edamame to the bowl.
Gently fold in the crispy tofu pieces.
Finish with a squeeze of fresh lemon juice and a pinch of salt and pepper to taste. Toss everything together and serve immediately.
