Enjoy a beautifully balanced dinner featuring a perfectly seared salmon fillet with crisp, tender asparagus alongside a creamy cauliflower mash enhanced with a touch of Greek yogurt and olive oil. A meal that’s satisfying in protein and bursting with clean, vibrant flavors.
INGREDIENTS
6 oz Salmon Fillet
2 tsp Extra Virgin Olive Oil (for searing)
6 asparagus spears
1 cup Cauliflower Florets
1/4 cup Nonfat Greek Yogurt
1/2 tsp Extra Virgin Olive Oil (for mash)
Salt and Black Pepper to taste
PREPARATION
Season the salmon fillet with salt and black pepper.
Heat 2 teaspoons of extra virgin olive oil in a non-stick skillet over medium-high heat. Once hot, add the salmon fillet skin-side down and sear for about 3-4 minutes per side until the exterior is crisp and the fish is cooked through.
While the salmon is cooking, steam the asparagus spears in a steamer or a covered pot with a small amount of water for approximately 4-5 minutes until they are vibrant green and tender.
For the cauliflower mash, steam the cauliflower florets until very tender, about 8-10 minutes. Transfer to a blender or use a potato masher to combine with 1/4 cup nonfat Greek yogurt, 1/2 teaspoon olive oil, salt and pepper to taste. Blend or mash until smooth and creamy.
Plate the seared salmon with the steamed asparagus on the side and a generous serving of cauliflower mash. Optionally garnish with a sprinkle of black pepper or a squeeze of lemon.
