Enjoy a delightful plate featuring a perfectly seared salmon fillet paired with crisp steamed green beans and a creamy cauliflower mash, subtly elevated with a hint of nutritional yeast and fragrant garlic. This well-balanced dinner offers a satisfying texture and flavor with each bite.
INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower Florets
3 tsp Olive Oil
1 tbsp Nutritional Yeast
1 clove Garlic
1 wedge Lemon
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat and add half of the olive oil (1.5 tsp). Once hot, place the salmon skin-side down (if applicable) and sear for about 3-4 minutes per side until a deep golden crust forms and the interior reaches desired doneness.
While the salmon is cooking, steam the green beans until tender-crisp, about 4-5 minutes. Season lightly with salt and pepper.
For the cauliflower mash, steam the cauliflower florets along with the garlic until very tender, about 8-10 minutes.
Transfer the steamed cauliflower and garlic to a bowl, add the remaining olive oil (1.5 tsp) and nutritional yeast, then mash until smooth. Adjust seasoning with salt and pepper as needed.
Plate the seared salmon alongside the steamed green beans and a generous scoop of cauliflower mash. Squeeze a lemon wedge over the salmon to finish.
