INGREDIENTS
350g Extra-Firm Tofu
37.5g Shelled Edamame (approx. 1/4 cup)
1 cup Broccoli (91g)
1 medium Red Bell Pepper (120g)
1 medium Carrot (61g)
1/2 cup Sugar Snap Peas (50g)
1/2 tbsp Sesame Oil
1 tbsp Low-Sodium Soy Sauce
2 cloves Garlic
1 tsp Fresh Ginger
1 tsp Sesame Seeds
PREPARATION
Press the tofu to remove excess moisture, then cut it into cubes.
In a small bowl, whisk together the low-sodium soy sauce, sesame oil, minced garlic, and grated ginger.
Heat a non-stick skillet over medium-high heat. Add the tofu cubes and lightly fry until the edges are golden and crispy.
Add the broccoli, bell pepper, carrot, and snap peas to the pan. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
Pour the sauce over the tofu and vegetables and toss gently to coat evenly.
Add the shelled edamame and stir until everything is warmed through.
Finish with a sprinkle of sesame seeds and serve immediately.
