PREPARATION
Press the tofu to remove excess moisture, then cut it into 1-inch cubes.
In a non-stick pan over medium-high heat, add a small drizzle of sesame oil. Once hot, add the tofu cubes and let them crisp up on all sides until golden, about 5-7 minutes.
Remove the tofu from the pan and set aside. In the same pan, add a touch more sesame oil if needed.
Add the chopped broccoli, sliced red bell pepper, sliced carrot, and snap peas. Stir-fry the vegetables for about 4-5 minutes until they are crisp-tender.
