INGREDIENTS
6 ounces Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1 clove Garlic
1 teaspoon Olive Oil
Salt & Pepper to taste
PREPARATION
Pat the salmon fillet dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat and add half of the olive oil. Sear the salmon for about 3-4 minutes on each side until nicely browned and cooked to your preference.
Meanwhile, steam the green beans until they are tender yet crisp, about 4-5 minutes.
In a small pot, combine the cauliflower florets, garlic, and a splash of water. Bring to a simmer and cook until the cauliflower is soft, approximately 8-10 minutes.
Once cooked, transfer the cauliflower and garlic to a blender and add the remaining olive oil. Blend until smooth and creamy, seasoning with salt and pepper.
Plate the seared salmon alongside the steamed green beans and garlic cauliflower mash, and serve immediately.
