INGREDIENTS
8 oz Salmon Fillet
1 large Yukon Gold Potato (~300g)
8 Asparagus Spears
2 Tbsp Unsalted Butter
1 Tbsp Olive Oil
2 cloves Garlic
Salt and Black Pepper to taste
PREPARATION
Start by preparing the Yukon Gold potato. Peel and cut the potato into even chunks, then boil in salted water until tender (about 15-20 minutes).
While the potato is boiling, steam the asparagus spears until crisp-tender, approximately 5-7 minutes. Set aside and season lightly with salt and pepper.
In a small saucepan over low heat, melt the 2 tablespoons of unsalted butter with the minced garlic. Allow the garlic to infuse the butter for a couple of minutes without browning.
Drain the potatoes and return them to the pot. Mash the potatoes and drizzle in the garlic butter mixture along with a pinch of salt and pepper. Stir until smooth and creamy.
Pat the salmon fillet dry with a paper towel. Season both sides with salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the salmon fillet skin-side down (if applicable) and sear for about 4-5 minutes until a golden crust forms.
Flip the salmon and continue to cook for another 3-4 minutes, or until the salmon is cooked to your desired level of doneness.
Plate the seared salmon alongside a generous serving of garlic mashed potatoes and steamed asparagus. Optionally, drizzle any remaining garlic butter over the salmon for added flavor.
Serve immediately and enjoy your balanced, wholesome dinner.
