Egg White and Turkey Sausage Scramble with Spinach
A light yet satisfying scramble featuring silky egg whites, lean turkey sausage, fresh spinach, and a savory crumbling of feta. The finish of olive oil and a side of toasted whole wheat creates a balanced, morning meal that is both delicate in flavor and energizing for your day.
INGREDIENTS
5 egg whites (approx 165g)
0.5 link turkey sausage (approx 30g)
1 cup fresh spinach (approx 30g)
1 oz feta cheese (approx 28g)
2 tsp extra virgin olive oil (approx 9g)
1.5 slices whole wheat bread (approx 45g)
PREPARATION
Preheat a nonstick skillet over medium heat and add the olive oil.
Lightly chop the turkey sausage and sauté it in the skillet for 1-2 minutes until warmed and slightly browned.
Add the spinach to the skillet and cook until wilted, about 1 minute.
Pour in the egg whites, stirring gently to mix with the sausage and spinach. Allow the eggs to begin setting and stir occasionally to create soft curds.
Once the scramble is mostly set but still slightly runny, sprinkle in the crumbled feta cheese and gently fold through.
Remove the scramble from the heat as the residual heat will finish cooking the eggs. Serve immediately alongside toasted whole wheat bread.
