INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1 cup Cauliflower
1 tbsp Extra Virgin Olive Oil
1/4 cup Unsweetened Almond Milk
1 tbsp Lemon Juice
1 tsp Garlic Powder
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Trim the asparagus and toss with half the olive oil, salt, and pepper. Spread on a baking sheet and roast in the oven for 12-15 minutes until tender and slightly charred.
Meanwhile, steam or boil the cauliflower florets until very tender, about 8-10 minutes.
Drain the cauliflower and transfer to a bowl. Add the almond milk, remaining olive oil, lemon juice, garlic powder, salt, and pepper. Blend with a fork or immersion blender until smooth and creamy. Adjust seasoning as needed.
Season the salmon fillet with salt and pepper.
Heat a non-stick skillet over medium-high heat. Once hot, sear the salmon, skin side down (if applicable) for 3-4 minutes until crispy, then flip and cook the other side for another 3-4 minutes until the salmon is just cooked through.
Plate the seared salmon alongside the roasted asparagus and a generous serving of cauliflower mash. Serve immediately and enjoy your balanced, flavorful dinner.
