A beautifully balanced dinner featuring a perfectly seared salmon filet paired with garlicky green beans and creamy mashed cauliflower. This dish promises a delightful blend of flavors and textures, with the rich, savory salmon complemented by the fresh, crisp beans and smooth, comforting cauliflower puree.
INGREDIENTS
6 oz Salmon Filet
1 cup Green Beans
1 cup Cauliflower
1 clove Garlic
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat a non-stick skillet over medium-high heat. Pat the salmon dry and season both sides lightly with salt and pepper.
Add half a teaspoon of olive oil to the skillet. Once hot, place the salmon filet skin-side down (if applicable) and sear for about 3-4 minutes until the crust is golden.
Flip the salmon filet and sear for an additional 3-4 minutes until cooked to your desired doneness. Remove and set aside to rest.
In the meantime, steam the green beans until tender-crisp (about 4-5 minutes). In a separate pot, steam the cauliflower for 8-10 minutes until soft.
While the vegetables are steaming, sauté the minced garlic in the remaining half teaspoon of olive oil in a small pan over low heat until fragrant, about 1 minute.
Lightly toss the steamed green beans with the sautéed garlic, season with salt and pepper, and keep warm.
Drain the steamed cauliflower and transfer to a bowl. Mash the cauliflower using a fork or potato masher until smooth. Season with a pinch of salt and pepper to taste.
Plate the mashed cauliflower as a base, then top with the garlic green beans and place the seared salmon filet on the side. Serve immediately and enjoy!
