PREPARATION
Press the tofu for at least 10 minutes to remove excess water, then crumble it into bite-sized pieces.
Heat 2 tsp of olive oil in a non-stick skillet over medium heat. Add sliced mushrooms and sauté until they soften and begin to brown, about 3-4 minutes.
