INGREDIENTS
210g Extra Firm Tofu
75g Shelled Edamame (1/2 cup)
20g Canned Chickpeas (approx. 2 tbsp)
60g Mixed Salad Greens (2 cups)
1/4 medium Red Bell Pepper
0.5 tbsp Tahini
1 tbsp Lemon Juice
1 clove Garlic
1 tsp Olive Oil
Salt & Pepper to taste
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture. Then cut it into 1/2-inch cubes.
Heat the olive oil in a non-stick skillet over medium-high heat. Add the tofu cubes and cook until all sides are golden and crispy, about 6-8 minutes. Season with a pinch of salt and pepper during cooking.
While tofu is cooking, prepare the dressing by combining tahini, lemon juice, minced garlic, a splash of water (to reach desired consistency), and a small pinch of salt and pepper in a small bowl. Stir until smooth.
In a large bowl, combine mixed salad greens, shelled edamame, canned chickpeas, and diced red bell pepper.
Add the crispy tofu to the salad and drizzle with the lemon tahini dressing. Toss gently to coat all ingredients evenly.
Serve immediately and enjoy this fresh, protein-packed power salad.
