Enjoy a hearty, flavor-packed dish featuring crispy potato skins loaded with a lean beef chili, accented by melted sharp cheddar. This dish combines satisfying crunch with a delightful blend of savory spices, making it a balanced and delicious choice for any meal.
INGREDIENTS
1 medium Russet Potato (150g)
3 oz Lean Ground Beef (95% lean)
1 oz Sharp Cheddar Cheese, shredded
1/4 cup diced Small Onion
1 tsp Chili Powder
1/4 tsp Garlic Powder
1 spray Olive Oil
PREPARATION
Preheat your oven to 400°F.
Wash the potato thoroughly and pat dry. Using a fork, prick the potato all over and bake for about 45-50 minutes until tender.
Once baked, let the potato cool slightly. Cut it in half lengthwise and carefully scoop out most of the flesh, leaving a thin layer inside the skins.
Spray the potato skins lightly with olive oil and return to the oven for 10 minutes to crisp up.
While the skins crisp, heat a skillet over medium heat. Add the lean ground beef and diced onion. Sauté until the beef is browned and the onion becomes soft.
Season the beef and onion mixture with chili powder, garlic powder, salt, and pepper to taste. Simmer briefly to let the flavors combine.
Fill each crispy potato skin with the lean beef chili mixture and top with shredded sharp cheddar cheese.
Place filled potato skins back into the oven for 3-5 minutes until the cheese is melted.
Serve warm and enjoy.
