1 cup fresh spinach
200g sweet potato, diced

PREPARATION
Preheat the oven to 425°F (220°C). Toss the diced sweet potatoes lightly with half the olive oil, salt, and pepper, and spread on a baking sheet.
Roast the sweet potatoes in the oven for 20-25 minutes or until tender and slightly crispy, stirring halfway through.
While the sweet potatoes roast, heat a non-stick skillet over medium heat and add the remaining olive oil.
