INGREDIENTS
8 oz boneless, skinless Chicken Thighs
1 medium ear Sweet Corn
1 medium Tomato
1 tsp Extra Virgin Olive Oil
2 sprigs Fresh Rosemary
2 sprigs Fresh Thyme
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C).
Pat the chicken thighs dry with paper towels and season generously with salt, pepper, chopped rosemary, and thyme.
Place the seasoned chicken thighs on a baking sheet lined with parchment paper.
Drizzle the extra virgin olive oil over the chicken thighs.
Arrange the ear of sweet corn on the same baking sheet. Brush lightly with a bit of olive oil and season with salt and pepper.
Cut the tomato in half and place on the baking sheet, cut side up. Allow the tomato halves to char slightly in the oven for a blistered effect.
Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F) and has a slight golden crust.
Remove from the oven and serve immediately, garnished with a few additional fresh herbs if desired.
