1/3 cup chickpeas (~55g)

200g firm tofu
1 cup baby spinach (30g)
1/4 cup shredded carrots (20g)
1/4 cup cucumber slices (30g)
1/4 cup bell pepper strips (30g)
PREPARATION
Press the tofu to remove excess moisture and cut it into strips. Optionally, lightly season with salt, pepper, and a squeeze of lemon.
In a non-stick skillet, lightly sauté the tofu strips over medium heat for 5-7 minutes until they are golden on the edges. Remove and let cool slightly.
