150g Potato
100g Broccoli

PREPARATION
Preheat your oven to 400°F (200°C).
Place the cod fillet on a lined baking sheet and drizzle with half the olive oil, lemon juice, salt, and pepper. Let it marinate briefly.
Cut the potato into bite-sized cubes and toss with the remaining olive oil, salt, and pepper. Spread them out on a separate baking sheet.
Roast the potato cubes for about 20-25 minutes or until golden and tender. At the same time, add the broccoli florets to the potato tray during the last 10-12 minutes of roasting.
