INGREDIENTS
6.5 oz Salmon Fillet (184g)
1 cup Green Beans (125g)
1 cup Cauliflower (107g)
1/4 cup Nonfat Greek Yogurt (62g)
1 tsp Olive Oil (5g)
2 cloves Garlic
Salt and Pepper to taste
1 Lemon Wedge
PREPARATION
Pat the salmon fillet dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat and add the olive oil.
Sear the salmon skin-side down for about 4 minutes, then flip and cook for another 3-4 minutes until just cooked through.
Meanwhile, steam the green beans for about 4-5 minutes until tender-crisp. In a pan, sauté minced garlic in a tiny bit of olive oil and toss in the green beans for additional flavor.
For the cauliflower mash, steam the cauliflower until very tender, about 8-10 minutes. Transfer to a bowl and blend with nonfat Greek yogurt, a pinch of salt and pepper until smooth.
Plate the seared salmon alongside the garlic green beans and a generous serving of cauliflower mash. Garnish with a lemon wedge to squeeze over the salmon before eating.
