INGREDIENTS
7 oz Wild Salmon Fillet (198g)
100g Sweet Potato (cooked)
100g Green Beans (raw)
1 tsp Olive Oil
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Pat the salmon fillet dry with paper towels and season both sides lightly with salt and pepper.
Heat a non-stick skillet over medium heat. Add half of the olive oil and sear the salmon, skin side down, for about 3-4 minutes until crisp. Flip and cook the other side for another 3-4 minutes until cooked through. Remove from heat and set aside.
For the sweet potato mash, warm the cooked sweet potato in a small saucepan over medium-low heat. Once heated, mash with a fork and season lightly with salt and a drizzle of olive oil if desired.
In another pan, heat the remaining olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the green beans and stir-fry for 4-5 minutes until tender-crisp, seasoning with a pinch of salt and pepper.
Plate the dish by placing a generous serving of sweet potato mash, topping it with seared salmon, and arranging the garlic green beans on the side. Serve immediately.
