PREPARATION
Preheat your oven to 425°F.
Peel (if desired) and dice the sweet potato into 1/2-inch cubes. Toss the cubes with olive oil, salt, pepper, and the mixed fresh herbs.
Spread the sweet potato cubes on a baking sheet lined with parchment paper and roast in the oven for about 20-25 minutes, stirring halfway through for even crisping.
