INGREDIENTS
6 oz Salmon Fillet
1 cup Green Beans
1 cup Cauliflower
1 tbsp Olive Oil
2 cloves Garlic
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Pat the salmon dry and season with salt and pepper.
Heat a non-stick skillet over medium-high heat.
Add a drizzle of olive oil and sear the salmon for about 3-4 minutes on each side until nicely browned and cooked through.
Meanwhile, bring a small pot of water to a simmer and blanch the green beans for 3-4 minutes until tender-crisp. Drain and set aside.
In the same pan, add a small amount of olive oil and sauté minced garlic (from approximately 2 cloves) briefly until fragrant. Add the blanched green beans and toss to coat with garlic oil. Squeeze in lemon juice and season with salt and pepper.
Steam the cauliflower florets until tender, then mash them lightly with a fork or potato masher. Season with salt and pepper to taste.
Plate the seared salmon alongside a serving of garlic green beans and a generous scoop of cauliflower mash.
