INGREDIENTS
6 oz Lean Ground Turkey (93% lean)
1 large Egg White
1 clove Fresh Garlic
1 tbsp Fresh Parsley
1/2 cup Fresh Marinara Sauce
1 cup Cooked Spinach
1 tsp Olive Oil
1/8 cup Grated Parmesan Cheese
Salt and Pepper to taste
PREPARATION
Preheat your oven to 375°F.
In a bowl, combine the lean ground turkey, egg white, minced garlic, chopped fresh parsley, salt, and pepper. Mix until just combined to form a uniform mixture.
Form the mixture into small meatballs, approximately 1 to 1.5 inches in diameter.
Place the meatballs on a lightly greased baking sheet and bake in the preheated oven for 15-18 minutes, or until they are cooked through.
While the meatballs are baking, heat the olive oil in a skillet over medium heat. Add the fresh marinara sauce and bring to a simmer.
Add the spinach to the skillet with the marinara sauce and sauté for 2-3 minutes until the spinach is wilted but still vibrant.
Once the meatballs are done, serve them over a bed of the sautéed greens and marinara sauce.
Finish with a light sprinkle of grated Parmesan cheese on top, and adjust salt and pepper as desired.
