INGREDIENTS
5 oz Ground Turkey (142g)
1 large Egg White (33g)
1/4 cup Whole Wheat Bread Crumbs (15g)
2 Garlic Cloves
2 Tbsp Fresh Parsley
1 tsp Olive Oil
1 cup Broccoli (91g)
2 Tbsp Grated Parmesan Cheese
Salt & Black Pepper to taste
PREPARATION
Preheat your oven to 400°F.
In a bowl, combine ground turkey, egg white, whole wheat bread crumbs, minced garlic (from 2 cloves), chopped fresh parsley, salt, and black pepper. Mix until just combined, being careful not to overwork the mixture.
Form the mixture into meatballs (about 8-10 meatballs, depending on your desired size) and place them on a parchment-lined baking sheet.
Bake the meatballs in the preheated oven for 18-20 minutes, or until they are cooked through and lightly browned.
While the meatballs are baking, toss broccoli florets with olive oil, salt, and pepper. Spread them evenly on another baking sheet.
After the meatballs have baked for about 10 minutes, place the broccoli in the oven. Roast for an additional 10-12 minutes until tender and slightly caramelized.
Once both the meatballs and broccoli are done, plate them together and sprinkle with grated Parmesan cheese. Serve warm.
