PREPARATION
Prepare all ingredients: Cook 3/4 cup of brown rice if not already cooked; press and cube the extra-firm tofu; lightly beat the eggs; and measure out shelled edamame and mixed vegetables.
Heat a non-stick pan over medium heat and add the 1/2 teaspoon of sesame oil. Once the oil is warmed, add the cubed tofu and stir-fry until lightly golden on all sides.
Push the tofu to one side of the pan and add the beaten eggs. Scramble the eggs until just set, then gently combine with the tofu.
Add the mixed vegetables and edamame to the pan. Stir-fry for about 2-3 minutes until the veggies are heated through and slightly crisp.
