6 oz Turkey Cutlets (170g)
100g Green Beans
1 cup Cauliflower (107g)
3 tsp Butter (15g)
2 tsp Olive Oil (10g)
1 Garlic Clove
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Pat the turkey cutlets dry and season both sides with salt and pepper.
Heat 1 teaspoon of olive oil in a skillet over medium-high heat. Once hot, add the turkey cutlets and sear for about 3-4 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, add the remaining teaspoon of olive oil and toss in the green beans along with a finely minced garlic clove. Sauté for about 4-5 minutes until the beans are tender-crisp, then drizzle with lemon juice and season with a pinch of salt.
Meanwhile, steam the cauliflower until very tender, about 8-10 minutes. Transfer to a bowl and add the butter. Mash with a fork or immersion blender until smooth and creamy; season with salt and pepper to taste.
