100 grams Shelled Edamame (cooked)

1/2 medium Red Bell Pepper (≈75g)
1/2 cup Sugar Snap Peas (≈50g)
1 teaspoon Sesame Oil
1 tablespoon Soy Sauce
1 teaspoon Rice Vinegar
1 clove Fresh Garlic, minced
1 teaspoon Fresh Ginger, grated
1 teaspoon Sesame Seeds
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
In a bowl, gently toss the tofu cubes with half of the sesame oil and a pinch of salt.
Heat a non-stick pan over medium-high heat and add the tofu. Cook until all sides turn golden and crispy, about 6-8 minutes. Remove tofu and set aside.
In the same pan, add the remaining sesame oil along with minced garlic and grated ginger. Sauté briefly until fragrant.
Add the chopped broccoli, sliced red bell pepper, and sugar snap peas to the pan. Stir-fry the vegetables for 3-4 minutes until they are crisp-tender.
