INGREDIENTS
4 ounces Chicken Breast
1/4 cup Whole Wheat Breadcrumbs
1 tablespoon Parmesan Cheese
1/2 cup Marinara Sauce
1 teaspoon Olive Oil
1 bunch Asparagus (approx. 6 spears portion)
PREPARATION
Preheat the oven to 400°F. Line a baking sheet with parchment paper.
Lightly coat the chicken breast with olive oil. In a shallow dish, spread out the whole wheat breadcrumbs.
Press the chicken into the breadcrumbs to create an even coating on both sides.
Place the breaded chicken on the prepared baking sheet and bake for 20-25 minutes until the chicken is cooked through and the coating is crispy.
In the last 5 minutes of baking, spoon marinara sauce over the chicken, then sprinkle Parmesan cheese on top. Return to the oven just until the cheese melts slightly.
Meanwhile, trim the asparagus ends, toss lightly with a small amount of olive oil, salt, and pepper, and place on another baking sheet.
Roast the asparagus in the oven for about 10-12 minutes until tender and slightly caramelized.
Plate the chicken with a side of roasted asparagus and extra marinara if desired.
